Artichoke Jerusalem

Jerusalem artichokes are part of the sunflower family and aren't related to globe artichokes. They look similar to ginger, have a rich nutty flavour and can be eaten either raw or cooked.

Are they good for me?

They’re a good source of dietary fibre and provide folate and potassium.

Buying & storing

Look for firm Jerusalem artichokes with minimal knobs. Store in a cool, dark place with good ventilation for up to a week.


Trim any big bumps to make them easier to peel. Once peeled, they discolour quickly, so place in a bowl of water and lemon juice to prevent browning.

Cooking tips

• To make a soup, boil with potato until soft. Blend with stock and cream.

• Boil until slightly tender. Slice. Place in a baking dish. Top with white sauce and breadcrumbs. Bake until golden.
